Professional Resort and Quantity Food Management

Continuing Education Course
Offered in Partnership with the Upper Cumberland Human Resource Agency and Lakeside Resort & Educational Complex

This course is an 18-week program of study offered in the hands-on environment of the Lakeside Resort & Educational Complex located in Smithville, Tennessee.  The course is intended for participants who are interested in gaining technical skills as professional food preparation and/or resort management personnel in hotels, restaurants and other institutions.  Instruction includes basic technical cooking skills, basic resort management skills, developing appropriate work habits, attitudes and professional practices, and the practice of safety and sanitation procedures.  Emphasis is placed on the planning, preparation and presentation of food dishes to be served and includes the multifaceted topic of catering. 

Upon completion, students will receive a certificate of completion from Tennessee Tech University and assistance with job placement from Lakeside Resort that leads to career opportunities in the resort and culinary management field.
